Add strawberries, lemon juice and sugar to a bowl, stir to combine. Let mixture sit at room temperature for at least 30 minutes so the strawberries can soften and realize their juices.
Add white chocolate melting wafers to a large microwave-safe bowl and melt in 20 seconds increments until melted. Allow chocolate to cool slightly. Remove Klondike Original Vanilla Bars from wrapping. Dip each bar fully in melted chocolate to coat. Sprinkle each bar evenly on both sides with ¼ cup pound cake and ¼ cup graham cracker crumbs; add to freezer for 5 minutes.
To serve: top each bar with a generous amount of whipped cream, followed by the macerated strawberries. Garnish with fresh mint.
